There's loads of different culinary cutting techniques that all have their function. Practice your knife skills at the same time as you experiment with different aromatics each evening.

There are some that you will find easier than others. For aromatics, the small , medium and large dice, the chop, are important cuts to learn. The brunoise is the most arduous and time-consuming strategy. Rouxbe is a perfect example of that technique here. Begin by cutting long, thin pieces (julienne), then dice in cubes of a size not greater than 1/8′′ (3 mm). French chefs sometimes brunoise down to 1/16′′ which isn't an instant learning ability!

Would you like to learn how to cook with no recycle? How to build layers of flavor into food is an important skill you'll need to learn. Aromatics play an important role in the flavoring of many foods, but they can be taught very easily. You probably already are familiar with some of the classic aromatic combinations.

We suggest that you set yourself a new "aromatic challenge" for a week each night. Seek as many flavours as you can from around the world. Repeat the mixes for a couple of weeks, and master them! Then, without a book on the recipe, you'll have taken a big step towards cooking.
